Rusty Chicken Thighs | Mash up garlic, chile paste, soy sauce, mayonnaise, rice vinegar, and, for a hint of sweetness, maple syrup. Chef John prefers chicken thighs here, because they stand up to an assertive marinade and stay moist and tasty after a smoky charred grilling. But chicken breasts will also work great, of course.
